Stuffed Zucchini Boats
Baked zucchini halves filled with a savory ground beef, tomato, and zucchini mixture, then topped with breadcrumbs and melted cheese.
Instructions
-
Step 1
Preheat the oven to 200°C.
-
Step 2
Halve the zucchini lengthwise. Scoop out the centers, leaving shells about 6 mm thick; chop the removed flesh and reserve it for the filling. Arrange the shells cut-side up in the baking dish.
-
Step 3
Bake the empty zucchini shells until they begin to soften, then remove them from the oven.
-
Step 4
Heat the olive oil in the skillet over medium heat. Add the onion and cook until softened.
-
Step 5
Add the garlic and cook until fragrant.
-
Step 6
Add the ground beef, salt, black pepper, and Italian seasoning. Cook over medium heat, breaking up the meat, until browned with no visible pink; drain excess fat if needed.
-
Step 7
Add the reserved chopped zucchini flesh and cook over medium heat until softened and most released moisture has evaporated.
-
Step 8
Stir in the marinara sauce and simmer until the filling thickens slightly.
-
Step 9
Divide the filling among the zucchini shells. Top evenly with the mozzarella, Parmesan, and breadcrumbs.
-
Step 10
Bake at 200°C until the zucchini is tender, the topping is golden, and the center of the filling reaches at least 74°C.
-
Step 11
Let the zucchini boats rest before serving.
